Sweet Corn Cakes:

1/2 cup all pourpose flour*
1/2 cup Masa Harina*
1 cup milk*
2 tsp baking powder*
1 Tbs sugar*
1 tsp salt*
1/2 tsp ground black pepper*
1 Tbs oil*
2 eggs*

1 1/4 Cup sweet corn cut off the husk
1 cup diced red and green bell pepper
1 Tbs finely chopped fresh cilantro
2 Tbs chopped shallots

Oil for frying

In a mixing bowl combine all the Ingredients *, mix until smooth. Now fold in the corn, peppers, cilantro and shallots.

Prep Time 20 minutes:

In a sauté pan heat the oil and drop 2 Tbs. of the mixture at a time and cook until both sides are golden brown. This is great as an Appetizer, served with fresh salsa or as a vegetable with an en
tree. They are a favorite at the Lodge.
